Equipment Highlight: RD-10
(Refrigerated Dough Retarder Cabinet)
We are excited to formally introduce the new RD Series of refrigerated dough retarders. Our RD Series is designed to accommodate the most popular dough box size, 18″x26″, and serves as the staging point between the overnight refrigeration holding and the dough press. Dough retarding is an important process for flavor development in any yeast-leavened dough. Between 45°F – 55°F (7°C – 13°C) yeast activity in the dough slows down, allowing deep, complex flavor and texture to develop. The RD Series is there to keep dough products at prime temperature during the crucial time before the bake.
Many operators utilize presses and rollers for consistent thickness and perfectly shaped crusts. These presses are especially sensitive to dough temperature. Since the RD Series ensures dough maintains a consistent temperature, it is the perfect companion for commercial rollers and presses and gives operators peace of mind that they are delivering a reliable product. Bottom line, the RD Series takes the guesswork out of staging dough to achieve the perfect, consistent roll or press and the best possible finished product.
As mentioned earlier, the RD-10 comes equipped with an efficient, yet powerful 1/8HP compressor. This compressor also comes equipped with a built-in dynamic condenser to enhance cooling in warm environments, as pizzeria kitchens often are. These components work together to create a unit that is capable of reaching ideal retarding temperatures of 55°F/13°13C within 10 minutes.
While not directly a cooling system, these units also come equipped with a robust internal system that aids in the cooling and stability of the internal environment of these units. The backbone of these units is a fully welded stainless-steel frame that is sturdy and durable. These stainless-steel panels can deal with many of the dents and cuts you may see on competitors’ products that use inferior components. This unit is fully insulated on every side including a fully insulated door and base to maintain the most consistent and optimal internal environment possible.
